Swedish Raw Chocolate Treats

Trying to get off of dairy and still appetising my tastebuds with Swedish baked staples is no longer difficult! Inspired by Swedish "chokladbollar", which originally contain a lot of butter and sugar, I managed to create a vegan version that tastes exactly the same as the original! I was pretty surprised by the magic that happened in the kitchen because these turned out really good if I can say so myself ;) They're really easy to make and do not require sitting infront of an oven worrying your dessert might burn. Not only are they raw, but they are also gluten and sugar free. Only thing required is to get your hands a little bit messy, but the best part about that is licking them clean! This recipe makes about 15 chocolate balls which would make a pleasing sweet snack for 5 people.

INGREDIENTS
3 dl rolled oats
2 tbsp cacao
1 tsp vanilla powder (or 1 to 2 drops of vanilla essence)
1 tbsp crushed freeze dried raspberries (the kind you find in cereal boxes) - optional
1 pinch salt
1 tbsp coffee
1 tbsp honey
2 tbsp coconut oil
8 dates - chopped then smashed with 3 tbsp hot/boiling water
Dessicated coconut
Mix all of the dry ingredients in a bowl. Remove the pits from the dates and chop the flesh into bite size pieces. Place the dates in a separate bowl and add about 3 tbsp of hot/boiling water to the dates and mash with a fork until you get a paste. Add the coconut oil to the dry ingredients, stir until smooth. Do the same with the date paste, coffee and honey. Give it all a good stir until everything is mixed through evenly.
Fill a teaspoon with the batter and roll it into a ball with your hands. Toss the ball in dessicated coconut or some remaining crushed freeze dried raspberries and place the balls on a plate in the fridge for 30 minutes. This allows them to harden and makes them less sticky and easy to eat.
After 30 minutes they're ready to be enjoyed.
Tip
There are many things you can add to the batter so get creative! Other amazing combinations include adding goji berries and dessicated coconut into the batter instead of the raspberries. Another is adding a mixture of cardamom and cinnamon (about 5 cardamom seeds crushed and 1 large pinch of cinnamon). Freshly chopped mint leaves are also another hit. P.S. If you have a hard time finding some of the ingredients (such as freeze dried raspberries) check out your local organic food store or wholefoods shop. They're bound to have it!
