Holy Guacamole!

I love avocados and think one of the best ways to eat them is in guacamole. I tend to have it for breakfast on hardbread (similar to Ryvita). When having it for breakfast just using one avocado is enough to keep you satisfied until lunchtime. This guacamole recipe includes 2 avos which is perfect for 3 persons to share, moreso if other dips (for example at a party) are provided.

INGREDIENTS

2 ripe avocados

1 large garlic clove

1/2 a lemon

1/2 small red onion

handfull of cherry tomatoes (or half a "normal" tomato)

salt and pepper

coriander (optional)

Cut your avocados in half, scoop out the flesh and place in a bowl. Mash the avocados with a fork until you get a smooth consistency. Press the garlic and add to the avocado. Squeeze the juice of half a lemon into the mixture and add chopped up cherry tomatoes and half a diced red onion. Stir and add salt and pepper to taste.

Tip: for an extra kick add a bit of coriander. Also nice to use as garnish :)
