Scrumptious Gluten-free Vegan Pancakes

The title says it all. I've had several non-vegan friends try these and they think they are tastier than traditional pancakes! Super easy and really quick to make. Recipe serves 2 hungry adults.

Pancake Mix
1 1/2 cups buckwheat flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. vanilla (powder or liquid)
1 tbsp apple cider vinegar
1/4 cup unsweetened applesauce
1 3/4 cup almond milk
coconut oil
Mix the dry ingredients in a bowl and then add the wet ingredients. I add the apple cider vinegar last to prevent curdling of the almond milk. Heat up a jab of coconut oil in a pan and start pouring in a ladle full of pancake mix and cook to perfection!
It's pretty difficult to muck these up. I don't even own a proper "cup" measurement but use a coffee mug instead, sometimes of varying sizes. Always turns out yummy!
Berry Jus
125g (usually half packet) of frozen organic berry mix
2 tbsp. of water
2-3 tbsp of honey
pinch of cinnamon
fresh mint (optional)
Add berries and water in a pot and thaw on medium heat. Then pop in the honey and cinnamon (to taste) and voila, you're done.
Tip: adding a bit of fresh mint gives that little extra oomph
